It is not difficult to preserve cabbage throughout the winter period. There are at least ten effective and proven methods. Everyone can choose one of them, which is most suitable for specific living conditions.
In all storage methods, there are mandatory general rules:
- It is necessary to select only cabbage of medium and late varieties with a high degree of keeping quality.
- The air temperature in the room should be constant - from 1 degree frost to 1 degree of heat.
- High humidity is required - from 85 to 98 percent.
It is very important to follow all these rules. For example, early varieties are generally not suitable for long-term storage. When the air temperature in the room where the cabbage is stored, more than four degrees Celsius, the vegetables will begin to burst and grow. And at low air humidity, the heads of cabbage will wither and lose their juiciness.
Among the large number of hybrids and varieties, there are the most suitable for long-term storage: Hermes, Blizzard, Megaton, Gift, Harvest, Final (mid-late) or Snow White, Turquoise plus, Lenox, Extra, Kamenka, Marathon (late).
How to keep cabbage fresh until spring
Method 1. Storing cabbage by weight
When choosing this storage method, it is necessary to keep the stump together with the root and the outer leaves of a dark green color when harvesting. They will dry out during long-term storage and will serve as a protective layer for cabbage from the appearance of rot. And by the stump it is very convenient to hang the cabbage at the highest height.
The positive aspects of this method:
- The vegetable units do not touch each other.
- Air access is provided from different sides.
- At any time, you can inspect each head of cabbage so as not to miss the appearance of disease or rot.
- Vegetables take up a minimum of space in the basement or cellar.
Method 2. Storing cabbage in clay
Preparing vegetables for storage in clay will take a lot of work and time, but it's worth it. In such a protective shell, the vegetable retains its juiciness and freshness for a long time, it is not threatened with rotting or drying out until spring.
A clay mixture is made from water and clay. For each glass of water, you will need two glasses of clay. After thorough mixing, you should get a thick chatterbox, which must be smeared with each head of cabbage. Not a single cabbage leaf should be visible through the clay coating. The clay should dry well in the air, after which all heads of cabbage are transferred to storage in a cool room.
Method 3. Storing cabbage in wooden boxes
This method will pay off if you follow the rule of good ventilation between vegetables. Each box will hold 10 heads of cabbage: 5 in the bottom layer and 5 in the top. Each head of cabbage should be with a small stump (about 3 centimeters). The first layer is laid up with stumps, and the second - down. In this design, the heads of cabbage do not interfere with each other and do not interfere with air permeability.
Method 4. Storing cabbage in the sand
There are two options for this method. For the first option, the cabbage heads should be with trimmed stalks. They must be placed in a box of great depth at a distance of at least 5 centimeters from each other and completely covered with dry sand. You can also lay out the second and third layers, depending on the depth of the container.
For the second option, cabbage is needed with stalks (about 8 centimeters in length). At the bottom of the wooden box there should be a twenty-centimeter layer of sand into which these stumps must be stuck.

Method 6. Storing cabbage in stacks
This method is effective for preserving a large crop, but if there is enough space in the basement or cellar. You will need wooden slats, from which the whole structure is assembled, similar to a pyramid. It is important that there are ventilation gaps (at least 10 centimeters) between the slats.
Cabbage should be without stalks. It is laid out in a checkerboard pattern so that the heads of cabbage do not touch each other.
Method 7. Storing cabbage in paper
You will need wrapping paper or regular newspaper and magazine sheets to pack each head of cabbage. Cabbage in such paper clothes can be folded into any containers with large openings for good ventilation (for example, baskets, plastic boxes or boxes).

- We dry it. Before laying the cabbage in the cellar for storage, the cabbage heads need to be dried for a day - two indoors or under a canopy, and then, depending on the future storage method, you can either cut off the roots with a sharp knife, or leave them as they are.
In order for cabbage in a cellar or basement to be stored correctly and not to rot for a long time, an appropriate microclimate is required. The temperature in the cellar in winter should not go beyond -1— +2 degrees, and humidity should be maintained at 90—98%. In such conditions, the cabbage will remain fresh and juicy for a long time, and the leaves will not rot.
Make sure there are no rodents in your cellar. They will never refuse to eat cabbage. The walls, as well as the shelves in the basement, need to be thoroughly dried before storing the crop. It also does not hurt to treat them with an antiseptic, you can use whitewashing with a solution of quicklime, but fumigation with sulfur is also suitable at the rate of 30—40 grams per 1 m 2.

It would seem that you have created the best conditions in order to preserve the cabbage for the winter: you have set aside a special place for this, cleaned it of spoiled leaves, wrapped each head with a newspaper….
But after 1-2 weeks, it dries, germinates, or begins to rot, mucus and an unpleasant odor appear. And then the whole harvest, which cost you a lot of effort, goes down the drain.
Just think! Buying good seeds. Sowing seeds. Seedling care. Diving of seedlings and constant watering. Long-term control of weeds and white midges.
Harvesting. And now, you have not yet had time to amuse yourself with beautiful and juicy heads, as they began to rot in your cellar, on the balcony, or in the refrigerator. Sad, isn't it?
I want to reassure you, you can keep the cabbage fresh until spring, and in the spring make delicious cabbage rolls or fresh salad from it. To do this, it is enough to follow several important rules.

Method number 1. Storage of cabbage in cellophane - allows you to keep the heads of cabbage fresh until the next harvest!
This method was shared with me by a neighbor in the country. He was already desperate to keep the cabbage fresh even until January. “How many different methods have I tried!” He said, “he dug up heads of cabbage with roots, hung them in the basement, buried them in the ground in the cellar, sprinkled them with chalk, wrapped them in newspaper….
Nothing worked, after a couple of weeks, or even faster, the cabbage began to sprout or dry ... ". Then he shared with me the method that I have been using for the 3rd year and which I will gladly share with you, dear readers.
Take a healthy head of cabbage with no damaged leaves, no signs of spoilage.
Cut off the stalk, but keep some green leaves.
Take feed chalk and dust the head of cabbage with it thoroughly on all sides.
Now take a plastic bag - use only food bags, in no case should you take garbage bags - put the same feed chalk inside the bag.
Carefully place the processed cabbage head in a chalk-sanded plastic bag.
Take a bowl of water, immerse the bag with the cabbage head in it, but so that the water does not get inside. Our goal is to extract all the air from the bag and create some kind of tightness.
Twist the tip of the bag so that the cellophane fits snugly against the head, and tie it tightly.
Can be stored in a cellar or basement at temperatures between 1C and 10C.
You can also wrap the cabbage tightly with cling film, but then the shelf life of the cabbage is reduced.
Method number 2 How to save cabbage until July 1 using ordinary clay?
This method also helps to keep the heads of cabbage fresh until the early cabbage harvest. Its only drawback is the duration and laboriousness of the process. But the result will meet all your expectations.
Cabbage is stored in the cellar in optimal temperature (1-4 C) and humidity (80-90%) conditions.
Take clay and dilute it with water to a medium thick sour cream consistency.
Thoroughly coat the cabbage head with clay so that the leaves are not visible. Carry out this procedure with all heads.
Hang the heads of cabbage by the stump with the head down until the clay hardens.
The cabbage can then be folded into wooden boxes and taken to the basement or cellar for storage.
The dried layer of clay can be removed very easily if necessary. The cabbage is kept fresh and juicy. It does not dry out, does not grow and retains all its useful substances.
Method number 3. How to preserve cabbage for the winter with a vacuum cleaner?
In fact, cabbage is wrapped in the same plastic bag that we talked about in method 1. But the main thing here is tightness. So that there is no oxygen in the bag, in which all sorts of painful microorganisms develop, rot, and cabbage quickly deteriorate.
By placing the head of cabbage in an airtight environment, you can keep it fresh for 12 months! What does the process look like?
- Take a plastic bag, it is better that it is food grade
- Place the head of cabbage with a small stump in a bag.
- Remove the brush from the vacuum cleaner tube.
- Point the tube into the cabbage bag and turn on the vacuum cleaner.
- When all the air has been pumped out, twist the ends of the cellophane around the stump and tie it tightly with a rope.
In this case, leave the stump open.
Cabbage can be put in boxes and taken out to the cellar for storage. You can store it in the basement, in the refrigerator, or even on the glassed-in balcony of your city apartment.
Method number 4. How to keep cabbage upside down until spring?
This method is also good in that it allows you to save a lot of free space on the shelves of your cellar, or basement.
- Dig a rosette of cabbage with roots.
- Tie a rope to the stump.
- Hang upside down from a beam or other structure attached to the ceiling.
Method number 5. Storing cabbage outside
This method is ideal when there is no cellar, as it allows you to store cabbage right outside until spring! To do this, you need to take the following actions:
- Dig a hole in the ground to a depth of 50cm.
- Clean the heads of cabbage from damaged upper leaves, cut off the stalk, leaving only 2 cm at the head.
- Place the cabbage in the house-shaped recess.
- Cover the top with healthy cabbage leaves, ordinary dry leaves, or dry, not rotten straw.
- Sprinkle 10-20 cm with earth (The lower the temperature, the thicker the earth layer is required).
If in your region winters are characterized by heavy snowfalls, then you can not sprinkle cabbage with earth, but cover it with snow 90-100 cm thick.

Storage conditions for cabbage
Cabbage is stored in cellars / basements, in closets and refrigerators, on balconies and even in earthen trenches. Wherever you define it, the main thing is to ensure optimal temperature for storage (from -1 to +1 ° С) and relative humidity 85-95%. Despite the fairly high humidity, the room should be free of fungi and mold. Air it at least once a month.

Having decided on the place and created the conditions, choose the appropriate storage method.
Methods for storing cabbage
1. In a box or box
This is the easiest and least laborious way. Heads of cabbage are simply stacked in a single layer in a box or box and make sure that they do not touch each other.
2. On the shelves
One of the most popular ways. Shelves with a width of at least 20 cm and a height of about 30 cm are placed along the walls (so that a head of cabbage can fit freely on them). Heads of cabbage are stacked upside down, wrapped in paper or plastic wrap.
3. On a "pillow" of sand
A 20-centimeter layer of dry sand is poured into a small box and the cabbage is stumped down. Consider: the length of the stump must be at least 8 cm!
4. In the sand
You can store cabbage not only on a sand pillow, but also in the sand itself. To do this, the cabbage stumps are cut to the very head of cabbage and the heads of cabbage are placed in a wooden box at a distance of 3-5 cm from each other. Having laid the first layer, it is completely covered with dry sand, then the second is laid, and so on, until the entire box is filled. This method is good because it reduces crop losses during storage.
5. In a clay "coat"
Mix 2 parts clay with 1 part water to make a thick sour cream mash. In turn, coat each head of cabbage with it and, after drying, put it on the shelves in the cellar or basement.
6. In stacks
In the basement, stacks of a pyramidal shape are made of strips about 5-15 cm thick.The base of the stack is about 1.5 m, the height is up to 1 m. - 10x10 cm.
The stump is cut to the very head of cabbage. The first layer is laid out so that there is a small distance between the heads of cabbage (about 10 cm). Then the next layer is laid out, making the gaps a little larger, and thus they build a pyramid, at the top of which there is 1 head of cabbage. Thanks to good ventilation, cabbage in such piles is perfectly preserved until spring.
7. In a bucket or bag
Yes, you can store cabbage in buckets, and even in bags with ordinary garden soil! Dig up the head of cabbage carefully with roots and lightly dig in a bucket or bag with wet soil. Place in a basement and water once a month.

If you use a film, make sure that it fits snugly against the head of cabbage. Otherwise, over time, condensation may appear in the voids - in this case, the film is simply changed to a new one.
Storage in paper will also prolong the shelf life of the cabbage in the refrigerator. Wrap each head of cabbage tightly with paper, place in a plastic bag, leaving a hole for ventilation, and store in the vegetable compartment. The paper will absorb moisture over time, so it should be inspected periodically and replaced if necessary.
10. On the balcony
On the balcony, cabbage, also wrapped in film or paper, is stored in boxes insulated with foam plastic or in special household thermal containers - for example, in the "Balcony Cellar", which you probably already know about from article 5 mistakes when storing potatoes.
11. In the trenches
You can also store cabbage in earthen trenches. To do this, a ditch is dug on a hill about half a meter deep and about 60 cm wide. The bottom is lined with straw, heads of cabbage are laid on it in two rows. A layer of straw is again put on top, covered with a wooden shield and covered with a 20-centimeter layer of earth. With the onset of frost, the trenches are insulated using the same straw or a layer of dry leaves.
This method is good only because voluminous heads of cabbage do not take up space in the room. But in a trench, they get wet, quickly rot and cannot withstand severe frosts. And even if the cabbage is miraculously preserved perfectly, you are unlikely to be able to quickly get a couple of heads of cabbage from such a storage in the rain or snow.
When laying cabbage for storage, consider not only the keeping quality of the varieties, but also all the nuances listed. Only in this case you will be able to preserve the harvest until spring without losses.
