Sweet potato sweet potato, or morning glory sweet potato (Latin Ipomoea batatas) is a valuable forage and food crop, a type of tuber-like plants of the Ipomoea genus of the Bindweed family. Sweet potato originates from Colombia and Peru, from where it spread throughout the region before the arrival of Europeans in South America, and also ended up in East and South Polynesia, the West Indies, Easter Island and New Zealand.
